Day 5: Dairy Challange

Breakfast: Toast with tofu cream cheese substitute, 1 cutie orange, and 1 egg with yolk. Yes, WITH yolk. I found out some pretty cool things about the down trodden egg yolk on THIS site.

Day 4: Dairy Challange


A little late in the day to post this, but here is yesterday's menu.Breakfast: 2 scrambled eggs, 1/2 cup GF oatmeal, 1 cutie orange.

Day 3 and Anniversary Dinner at Biaggi's

Breakfast: 2 scrambled egg whites on toast with 1 cutie orange.

Dinner: Biaggi's herb-crusted Yellow Tail Flounder served over a basil pesto wine broth with grilled vegetables (they are the lump hiding under the flounder) and roasted potatoes with Gluten free flat bread on the side. The flounder was ok but not the best I've had, and the potato's tasted like french fries, however their new gluten free flat bread was sensational and I ate two servings! I had to guesstimate using the nutrition guides from several online resources so this might not be accurate but I think it's close.

Dairy Free Challange: Day 2 and GF Corn Dogs!

Breakfast: Gluten free corn flakes with almond milk and half of a green apple.

Dairy Free for a Month Challenge: Day 1

For the past 4 years Doctors, Dietitians, Bear and I have all been looking over my diet and trying to find where we are going wrong. Serving size is fine. I've eliminated gluten, cow milk, red meats, and egg yokes. Which led us to suspect CHEESE. I love my cheese and perhaps a bit to much; so for one month I am giving up dairy to see if there is any change in my health or waistline. Bear (bless his heart) is taking the challenge with me. We're not going to nit pick everything, we're just getting rid of cheese, creams and other dairy based foods. I will do my best to post our menu every day and it's nutrition table. Wish us luck!Breakfast: Two scrambled egg whites with peppers and black olives. One slice of gluten free toast topped with tofu cream cheese and half a green apple.

Heavenly Bliss

I've named this Heavenly Bliss. I was cleaning out the freezer yesterday and among the piles and piles of frozen banana's I found three random frozen strawberries. I decided to make a smoothie using:
2 smallish frozen bananas
3 frozen largish strawberries
and just a splash of unsweetened almond milk

This was my first time making a smoothie without ice cream or yogurt and did not want it to be overly liquidy so I decided to add only the tiniest amount of almond milk to begin with. It turned out to be a good thing and ended up with a texture and taste not unlike an incredibly smooth ice cream. This recipe yields just a little over a cup of Heavenly Bliss. What an incredible healthy (not to mention vegan) alternative for sugar cravings. Enjoy!

GF Bisquick Pancakes

I don't think I've done a review of Bisquick's GF Pancake Mix yet. They are absolutely delicious! We visited my sister out of town for Christmas and she made these while we were there. They look, smell, and taste just like non gluten free buttermilk pancakes. I had no idea that Bisquick was making GF pancake mix. When we got home Bear made some biscuits using this flour and they turned out so light and tasty. This brand of pancake mix gets four thumbs up from us. Enjoy!
