Day 7: Dairy Challenge

Breakfast: 2 egg whites scrambled with black olives and peppers.

Lunch: Salad with grilled chicken, avocado, black olives, and vegetables (Just for you Rita, those vegetables are romaine lettuce, sugar snap peas, cabbage, carrots, and broccoli).

Snack: 2 of my now staple turkey wraps. Made with 2 corn tortillas, tofu sour cream, turkey meat, and spicy guacamole. I was using cheese to keep from crashing (hypoglycemia) but these have enough protein and seem to be the perfect afternoon snack to carry me through the day.

Dinner: Home made spaghetti with GF noodles. We had a lot of fun figuring out the total for this. In the end we ended up adding all the nutrition totals for everything that was used to make the sauce and then portioning it all into separate containers once made, then we divided the sum total by the proportions and added the noodles. One serving is one cup of sauce and 4 oz of noodles and yes they were weighed on a scale }:)

Day 6: Dairy Challenge

Feeling a bit lazy today and threw a bunch of stuff together. Hey! It happens to everyone and at least I'm being honest.
Breakfast: A bowl of Gluten Free Corn flakes and almond milk.

Snack: 2 corn tortilla's with peanut butter and 1/4 cup dried unsweetened cranberries (because I like them tart).

Lunch: A turkey sandwich on GF bread with apple chips for a side.

Day 5: Dairy Challange

Breakfast: Toast with tofu cream cheese substitute, 1 cutie orange, and 1 egg with yolk. Yes, WITH yolk. I found out some pretty cool things about the down trodden egg yolk on THIS site.

Day 3 and Anniversary Dinner at Biaggi's

Dinner: Biaggi's herb-crusted Yellow Tail Flounder served over a basil pesto wine broth with grilled vegetables (they are the lump hiding under the flounder) and roasted potatoes with Gluten free flat bread on the side. The flounder was ok but not the best I've had, and the potato's tasted like french fries, however their new gluten free flat bread was sensational and I ate two servings! I had to guesstimate using the nutrition guides from several online resources so this might not be accurate but I think it's close.

Dairy Free Challange: Day 2 and GF Corn Dogs!

Dairy Free for a Month Challenge: Day 1

For the past 4 years Doctors, Dietitians, Bear and I have all been looking over my diet and trying to find where we are going wrong. Serving size is fine. I've eliminated gluten, cow milk, red meats, and egg yokes. Which led us to suspect CHEESE. I love my cheese and perhaps a bit to much; so for one month I am giving up dairy to see if there is any change in my health or waistline. Bear (bless his heart) is taking the challenge with me. We're not going to nit pick everything, we're just getting rid of cheese, creams and other dairy based foods. I will do my best to post our menu every day and it's nutrition table.
