Lunch

mmmmm, Yet another yummy lunch made by my Dear Bear. In the top left corner there is a scrambled egg with mushrooms and pepper and baby dill pickles. In the top right pocket there are strawberries and blue berries. In the bottom left pocket is our family's favorite peanut butter quesadillas, and in the bottom right pockets there are snap peas and a small inch long chunk of smoked turkey sausage. Mmmmm. I think that because there is such a large variety of things in the lunch I fill up faster. This lunch is approximately 275 to 300 calories. Lunch is our biggest meal. Also we've switched to buying medium eggs. Size wise we really can't tell the difference between a medium egg and an extra large egg now that we made the switch but it cuts 17 calories and 59.2 mg of cholesterol. Well worth it. With all of the changes we've made to our diet, Bear and I have each lost over 30 lbs. I am almost to my first mini goal. Wish me luck and Enjoy!

Bento Lunches (Kind of)


I keep meaning to post these lunches. Bear and I are loving our Bento lunch boxes. The compartments help in planning what and how much to pack. From the top left: snap peas, rice balls, tiny yellow pepper, blue berries, turkey sausage, and tamagoyaki.
This is today's lunch. From the top left corner: Brussels sprouts, turkey sausage, rice ball and egg, blue berries and strawberries, more rice balls and some green olives. The green olives are Lindsey brand. Their website says that they are gluten free and so far I have had no problems with them. Enjoy!

Biaggi's and 30lb Marker

Yum, another wonderful trip too Biaggi's. This time I tried the Cesar Salad (no croutons).
Filling and sooo yummy. I missed the dairy, but still wont bring it home. Even though I indulged in this creamy salad I've still managed to loose more weight. I've now lost 30 lbs!!

This is kind of tacked on the end, but I had to share our home grown strawberries. 100% organic and so beautiful. In the past our strawberries have never grown so big and juicy.

Kellogg's GF Rice Krispies Review

Over the weekend Bear and I broke open a box of Kellogg's new Gluten Free Rice Krispies. For breakfast we had the plain cereal with almond milk. They snapped and crackled and popped away just like their gluten filled counterparts. They had the same appearance, texture and taste of regular Rice Krispies only with a faint smokey flavor. They were quite delicious and did not rip up the top of our mouths as several gluten free cereals are known to do. One box has almost 12 cups but not quite. We also made peanut butter Rice Krispie squares topped with chocolate and had to open a second box because we ran out. They had the same taste, texture, and consistency as regular rice krispie bars. All in all this was a win for Kellogg's. Thumbs up and Enjoy!

Gluten Free Rice Krispies

They're HERE!!!! Kellogg's now has Gluten Free Rice Krispies. I first heard about them on Li Loves David's blog and have been watching the stores diligently. The gluten free Rice Krispies are made from Brown rice. I'm not sure why Kellogg's made that choice since the only problem with the original Rice Krispies was Barely Malt in the ingredients. I have not had a chance to try them yet, but am looking forward to opening them up and I'll let you know what I think when I try them.On the back of the box is a recipe for gluten free Rice Krispie bars... Mmmmm how many years has it been now? I loose track of time. Guess what we're making tonight *wink* I'll let you know how they turn out later and if they taste the same as the ones I can remember from my childhood. I hope they are good, there are going to be a lot more children running around my house soon. I'm sure that they would love a tasty treat. More on that later in my family blog. Enjoy!

Wednesday Lunch

Ok, so Recipe Wednesday and Foodie Friday just aren't working out. So instead today I will show you my lunch and it's components.
~In the upper left pocket of my Bento box is 1/4 cup of fat free cottage cheese (Bear may have a dairy issue but I can have a treat once in a while. In his lunch I put some turkey peperoni in this pocket).
~In the upper right pocket is a mixture of grapes and blueberries.
~ The lower left container has what we call peanut butter quesadillas. They are peanut butter sandwiches made with corn tortillas. I also have a few chocolates as a treat.
~ The lower right container is a mixture of miniature sweet peppers and snap peas. (Yum!).

Summer Bento

Looks yummy doesn't it? This lunch consists of 2 to 3 oz of chicken, 4 cherries, 6 cut up strawberries, 1/2 a cup of rice with 1/2 a medium hard boiled egg on top (kind of hard to see, but it's shaped like a fish), and about 1/2 a cup of snap peas. MMMMMM summer time lunches are the best. Enjoy!
